Cucumber, Bacon & Tomato Salad

We had a department potluck last week and I was signed up to bring vegetables. I debated between simply picking up a platter and a vegetable dip, but then I decided to get a little more creative and make my dish with the extra garden Cucumbers and Tomatoes that my talented green-thumb coworkers had harvested. This is probably as easy as you can get when it comes to salad recipes and it looks very nice when it is all mixed together. I liked it much more than bringing plain old vegetables to share and I think my coworkers did too- probably because they got some bacon in every bite!
First I fried and cut my Bacon using heavy-duty kitchen scissors, I used an extra amount of Bacon and it was a total hit at the office. Feel free to use whatever amount suits you or the group you’re making the salad for though. Next, I chopped up my Tomatoes and Cucumbers. Finally I mixed the spices and Mayo together.
When all of your prep work is done simply toss everything into one big bowl, mix and stir the ingredients and serve your dish.
This salad is sure to be a hit at any potluck, family get-together or dinner outing. It looks very presentable, colorful, tastes delicious and you don’t feel guilty about eating bacon because there are garden Cucumbers and Tomatoes in the mix! Now that’s a total win-win. Enjoy!
- 2 Medium Cucumbers
- 2 Medium Tomatoes or 1 Container Cherry Tomatoes
- 2 T. Mayo
- ½ lb. Bacon, fried
- ⅛ tsp. Garlic Powder
- Salt and Pepper to your taste
- Cut up Cucumbers and Tomatoes to bite size pieces.
- Fry Bacon and chop into small pieces
- Add Mayo
- Mix in Garlic Powder, Salt and Pepper
- Mix all ingredients together and serve.
