How to Roast Pumpkin Seeds
This can be fun for the kids, so after you carve off the top of the pumpkin, let the kids scoop out the seeds and place them directly in a strainer or colander in the sink. You’ll need to rinse well to separate the seeds from the stringy pulp.
In a mixing bowl, add 2 cups rinsed seeds, 2 teaspoons cooking oil (enough to coat the seeds or use melted butter for a richer taste), a pinch of salt.
Place seeds on a baking sheet covered with parchment paper. Foil will work as well. Spread them out so they are not clumped together.
Roast seeds at 300 degrees, stirring every 15 minutes until golden brown. Approx. 30 minutes.
1. Roasted Sea Salt Pumpkin Seeds
Take the basic pumpkin seeds, place in mixing bowl and add a teaspoon of sea salt. These crunchy, salty seeds are packed with crunch and are ready to be eaten as is or as compliment to soup and salads.
2. Roasted Pumpkin Pie-Flavored Seeds
Here is a recipe that everyone will love, straight from the bowl. You can use as a topping for a pie or even ice cream.
After you have roasted the pumpkin seeds, place in a bowl and add the following: 2 tablespoons brown sugar, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, and a pinch of ground allspice and mix well.
3. Roasted Barbecue Flavored Pumpkin Seeds
During the basic pumpkin seed roasting recipe, add your favorite dry barbecue seasoning to the mix. Ideas include your steak or rib rub. Roast for 30 minutes. These are a wonderful snack right from the bowl.
4. Sweet Treat Cinnamon Sugar Roasted Pumpkin Seeds
Roast the seeds using the basic recipe. Mix the following together: warm roasted seeds, 2 teaspoons granulated sugar, ½ teaspoon ground cinnamon.
5. Sweet and Spicy Roasted Pumpkin Seeds
In a mixing bowl, add your rinsed pumpkin seeds, a pinch of salt, a teaspoon of Sriracha sauce and 1 tablespoon of honey. You can also use chili pepper flakes or your favorite hot sauce. Roast at 300 degrees for 30 minutes or until brown. Stir occasionally.
If you have time, soak the seeds overnight in salted water. They will plump up and make for an even better roasted pumpkin seed.
Any squash seeds will work. Butternut and acorn seeds are delicious roasted.
