Easy Eats: Cucumber and Tomato Salad with Dill Balsamic
This light and flavorful salad is best enjoyed in the full summer sun.

2 Cucumbers, seeded and roughly chopped
1 Tomato, roughly chopped
1/4 Red Onion, sliced
1/4 Cup Dill Balsamic Vinegar
1/4 Cup Extra Virgin Olive Oil
1 tsp. Sea Salt
1 Bag Mixed Greens
Fresh Dill for Garnish (optional)
Step 1: Place cucumbers, tomatoes, and onions in large bowl. Whisk together dill balsamic and olive oil and pour over cucumber mixture. Sprinkle with sea salt and combine. Serve over mixed greens and garnish with dill, if desired.
