There’s just something about spring that says it’s time to brunch. That perfect meal to satisfy everything you’re craving – sweet breads and pastries, savory quiches and omelets, fresh fruit, juices, coffee but also mimosas and bloody marys. A light salad or baked ham are also wonderful.

We started “brunching” in the late 19th and early 20th centuries in Britain. Brunch evolved from hunting luncheons – a substantial but leisurely meal that the wealthy would have at their country houses after the morning’s hunt.

If you’re planning a brunch – for Easter, Mother’s Day or an easy way to entertain – we have some wonderful recipes to try.

This Potato and Egg Bake from Better Homes & Gardens combines bacon, cheese, potatoes, eggs, tomatoes and broccoli for a hearty and fresh breakfast casserole.

This recipe is for a dish that looks amazing – Pancake Egg Bacon Cups. They’re a pretty easy way to cook up eggs for a crowd – thanks to using a few muffin tins!

Citrus is wonderful and in season right now – so play up this fruit at your brunch. This recipe for Maple Citrus Salad gets a boost from maple syrup and coconut.
