Broiled Lemon Pepper Salmon

Spreading the salad dressing on top of the salmon really helps to keep the salmon moist when it cooks under the broiler and it is a quick easy meal for 4 in 20 minutes.

Ingredients

1 lb. Salmon Fillet
2 T. Salad Dressing Or Mayonnaise
1 tsp. Lemon Pepper Seasoning
1/4 tsp. Ground Mustard

Directions

Set oven control to broil. Spray rack in broiler pan with cooking spray. Place salmon, skin side up, on rack in pan. Broil 4 to 6 inches from heat for 7 minutes. Turn salmon; broil 7-9 minutes longer or until fish flakes easily with fork and internal temperature reaches 145 degrees. Meanwhile, in a small bowl, mix remaining ingredients. Spread salad dressing mixture over salmon; broil for 1-2 minutes longer or until topping is lightly browned and bubbly. Makes 4 Servings

Pork Chops In Country Onion Gravy

Ingredients

1 lb. Boneless Pork Loin Chops (about 4)
2 Cups Onions, chopped
1 Cup Beef Broth
1/8 tsp. Pepper
1/3 Cup Skim Milk
2 T. All-Purpose Flour

Directions

Spray nonstick skillet with cooking spray; heat over medium-high heat. Cook pork chops in skillet about 6 minutes, turning once, until brown on both sides. Remove pork from skillet; cover to keep warm. Reduce heat to medium. Add onions to skillet, cook 3 minutes. Stir in broth and pepper. Return pork to skillet; spoon onion mixture over pork. Cover tightly and simmer 12 minutes or until pork is no longer pink and meat thermometer inserted in center reads 160°F. Mix milk and flour in small bowl. Add to skillet; cook 2 to 3 minutes, stirring constantly, until thickened. Makes 4 Servings

Apple Walnut Spinach Salad

Ingredients

6 Cups Baby Spinach Leaves
1 Apple, thinly sliced
1/2 Cup Crumbled Bleu Cheese
1/4 Cup Red Onions, slivered
1/4 Cup Walnuts, chopped
1/4 Cup Raspberry Vinaigrette Dressing

Directions

Combine ingredients and serve immediately.
