Americans will roast up a whopping 45 million turkeys for Thanksgiving – and that means we’ll have a lot of leftovers! So what can you do with your Thanksgiving leftovers? We’ve compiled some great recipes for your leftover turkey, mashed potatoes, stuffing and more. has an incredibly exhaustive list of what to make with leftover turkey – from stock to pot pie to enchiladas. It also includes great ideas for the rest of your Thanksgiving meal – like stuffing-stuffed mushrooms and a delicious bread that uses up your sweet potatoes!

I always make too many mashed potatoes – so this recipe from Giada de Luarentiis at Food Network will be perfect. And it’s got a great name: Eggs in Purgatory. Leftover mashed potatoes are the main ingredients for these dumplings and extra gravy is perfect as a dipping sauce.

Leftover stuffing also gets a new life in this recipe for a frittata! It’s super simple and only takes 15 minutes.

Your traditional cranberry sauce can be re-used as well – it’s a wonderful addition to these muffins. Extra cranberry sauce is also delicious as part of a turkey and brie sandwich – especially if you make it as a warm, gooey panini!  The sauce can also be a base for a homemade Cranberry BBQ Sauce that would be delicious on your leftover turkey or pork.
