I always make too many mashed potatoes – so this recipe from Giada de Luarentiis at Food Network will be perfect. And it’s got a great name: Eggs in Purgatory. Leftover mashed potatoes are the main ingredients for these dumplings and extra gravy is perfect as a dipping sauce.
