St. Patrick’s Day Recipes for Kids

St. Patrick’s Day is March 17, and you know you can’t let the day pass by without giving your kids the excitement of eating something green! I think we can all admit, food is just more fun to eat when it’s green!

A traditional crop of Ireland, potatoes are rich in vitamins and minerals, and with this recipe for Green Mashed Potatoes, you’ll get to sneak in some extra nutrition with spinach.

Green Mashed Potaotes


  • 8 large potatoes
  • 1 cup sour cream
  • 1 teaspoon sugar
  • 1/4 pound butter
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 tablespoons minced chives
  • 1 package frozen chopped spinach, cooked as directed
  • 1 cup shredded Cheddar cheese
  • Milk

Cook and mash potatoes. Add sour cream, sugar, butter, salt and pepper. Beat until light and fluffy. Add a little milk for creamy consistency. Add chives and well-drained spinach and beat well. Put into casserole and sprinkle cheese on top. Refrigerate. To serve, bake at 400 degrees for 20 to 30 minutes.

A Lucky Lime Float serves as the perfect sweet ending to your green meal! Just scoop lime sherbert into a glass and add your favorite lemon-lime soda. Garnish with whipped cream and green sprinkles.
